1 cup sugar
1/2 cup unsalted butter
3 eggs
1 cup fresh lemon juice
Zest from 2 lemons

Instructions:

In a saucepan, melt the butter over low heat.

Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
