Classic Chicken Fajitas

Ingredients:

1 lb chicken breast, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
2 tbsp olive oil
1 packet fajita seasoning mix
8 flour tortillas

Steps:

In a large skillet, heat olive oil over medium heat.
Add chicken and cook until browned, about 5 minutes.
Add bell peppers and onion, and cook until vegetables are softened, about 5 minutes.
Sprinkle fajita seasoning mix over chicken and vegetables, and stir to combine.
Heat tortillas in a separate skillet or microwave according to package instructions.
Fill tortillas with chicken and vegetable mixture, and serve hot.

Spicy Shrimp Fajitas

Ingredients:

1 lb shrimp, peeled and deveined
1 red onion, sliced
1 jalapeno, sliced
1 tsp cayenne pepper
1 tsp paprika
1/2 tsp garlic powder
1/4 cup lime juice
8 corn tortillas

Steps:

In a large bowl, mix shrimp with cayenne pepper, paprika, and garlic powder.
Heat olive oil in a skillet over medium heat and add shrimp, cooking until pink and cooked through, about 4-5 minutes.
Add onion and jalapeno to the skillet and cook until softened, about 3 minutes.
Squeeze lime juice over shrimp and vegetables, and stir to combine.
Heat corn tortillas in a separate skillet or microwave according to package instructions.
Fill tortillas with shrimp and vegetable mixture, and serve hot.
