Classic Guacamole

Ingredients:

2 ripe avocados
1/4 cup diced red onion
1/4 cup chopped cilantro
1 jalapeno, seeded and minced
1 clove garlic, minced
Juice of 1 lime
Salt and pepper to taste

Instructions:

Cut the avocados in half, remove the pit, and scoop out the flesh into a bowl.
Mash the avocados with a fork until slightly chunky.
Add the red onion, cilantro, jalapeno, garlic, lime juice, salt, and pepper. Mix until well combined.
Adjust seasoning to taste and serve with tortilla chips or as a topping for tacos.

Mango Guacamole

Ingredients:

2 ripe avocados
1 ripe mango, diced
1/4 cup diced red onion
1/4 cup chopped cilantro
1 jalapeno, seeded and minced
Juice of 1 lime
Salt and pepper to taste

Instructions:

Cut the avocados in half, remove the pit, and scoop out the flesh into a bowl.
Add the diced mango, red onion, cilantro, jalapeno, lime juice, salt, and pepper.
Mix until well combined, leaving some mango chunks for texture.
Adjust seasoning to taste and serve with plantain chips or grilled fish.

1/2 cup crumbled feta cheese
1/4 cup diced red onion
1/4 cup chopped kalamata olives
1/4 cup chopped fresh dill
Juice of 1 lemon
